Hold Select while waiting for any of Spider-Man's missions to load. This will turn his red costume into Venom's black costume.
Fight as Carnage in multi-player mode:
Get an 80% game completion.
Fight as Spider-Man in black costume in multi-player mode:
Get a 100% game completion.
