Play as Superman:
Press Up(2), Down(2), Left, Right, Left, Right, Circle, X at the event selection screen.
Bikinis:
At event selection screen, highlight either "Springboard" or "50m Freestyle". Then, press Up(2), Down(2), Left, Right, Left, Right, Circle, X. A squeal will confirm correct code entry.
Mole:
In the Long Jump, match the last three numbers of your distance, such as "6.66". A mole will appear from the location of your jump.
